Mediterranean Quinoa Salad By YumAroma Recipes

A nutrient-packed Mediterranean Quinoa Salad with fresh veggies, chickpeas, and a tangy lemon-tahini dressing. It's perfect as a main dish or side.

Ingredients:

1 cup cooked quinoa
1/2 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, chopped
1/4 cup Kalamata olives, sliced
1/2 cup chickpeas, drained and rinsed
1/4 cup lemon juice
2 tbsp tahini
2 tbsp olive oil
Salt and pepper to taste

Instructions:

In a large bowl, combine quinoa, cherry tomatoes, cucumber, red onion, olives, and chickpeas.
Whisk together lemon juice, tahini, olive oil, salt, and pepper.
Pour the dressing over the salad and toss to combine.
